Breakfast Pizza of course…

This was Huxley and Raphael’s invention… and you know what? it’s really rather good… loads of fresh veg, garlic you can add a little super boost for extra nutrients, eggs for protein, already smashing todays five a day or whatever it is…not a bad way to start the day!

Please note that you can use whatever veggies you have, this just happened to be what was in our fridge on the day. You know, you could get really jiggy with it and add some smoked salmon  and dill or bacon and tomato for a BLT twist…

What you will need (for two pizza’s)

  • 2 Large flour Tortilla wraps (we like the wholemeal and the muligrain variety)
  • Eggs – 4 per pizza
  • 1/2 white onion or five spring onions
  • 1 Garlic clove
  • Glug of olive oil
  • 2 mushrooms
  • Something green- broccoli or spinach is always great, we had these dark green leaves that worked well.
  • 1 Grated carrot
  • 1/2 a red pepper
  • 1 1/2 Tsp honey
  • 2 Tbsp sweetcorn
  • 1 1/2 Tsp Marigold Boullion
  • 1/2 Tsp Bioglan green boost powder

Grate your carrot and finely chop all the ingredients. Pop in a pan (actually, you want the pan size to be a little smaller than the tortilla) along with the honey, boullion, super green powder and gently sauté in a glug of olive oil and a good splash of water. If the veggies start to dry out and don’t yet look cooked then add another splash of water.

While your veggies are bubbling away, crack on with your pizza base… So just like Huxley is doing here, dribble a little olive oil onto your tortilla and rub it evenly into both sides.

Put your oiled flour tortilla under the grill (on high) and keep an eye on it, as soon as it starts to brown turn it over and repeat. Be warned his happens quickly! put your flour tortilla to one side to cool and stiffen.

Once your veggies are sautéed but still bright in colour add your 4 whisked eggs and mix all ingredients together. Keep moving them around the pan so that they are almost cooked  through,  then stop and flatten then down a little using a spatula, press a few basil leaves on the top and then put the pan under the grill until the top is cooked.

This next part is up to you, we spread some mayo on our tortilla, you could also smear (dreadful word) some mashed avocado? or leave it plain.. then top with your egg and veggie creation and cut into slices, much to Sam’s dismay i always use a big pair of kitchen scissors for cutting up pizza, might not look the part, but is super practical, especially if you are trying to cut through salami!!
