Halloumi Bake
with Supergreens

To celebrate World Vegetarian Day, we are sharing this luscious spicy halloumi traybake with Supergreens! Super easy to make and packed with nourishment.
Ingredients

- Avocado Oil
- 2 cloves garlic
- 250g chestnut mushrooms
- 400g (1 can) of cannellini beans
- 1 jar (690g) passata
- 1 tsp smoked paprika
- ½ tsp mixed herbs
- ¼ tsp balsamic vinegar
- ½ tsp coconut sugar
- 1 tsp Bioglan Superfoods Supergreens
- 225g halloumi cheese, sliced
- Parsley to garnish
Method
1. Pre heat the oven to 200 degrees.
2. Heat the avocado oil and add the mushrooms frying until they're golden brown.
3. Add the cannellini beans.
4. Add the passata along with the paprika, mixed herbs, balsamic vinegar, coconut sugar and Supergreens and mix well.
5. Spoon into an oven proof dish and top with sliced halloumi.
6. Bake until the Halloumi is golden brown.
7. Garnish with parsley and serve with flatbread, rice or whatever you like - enjoy!
