Beanie Burger with Supergreens

These vegetarian bean burgers with Supergreens, are packed full of veggies and flavour, and will satisfy your burger craving.
Ingredients
Buy ingredients online at your selected retailer
- 1 can mixed beans (400g)
- 2 spring onions
- 1 red chilli
- ¼ cup sweet corn
- ½ cup breadcrumbs
- 1 tsp paprika
- 1 tsp cumin seeds
- 1 tsp mixed seeds
- 1tsp Bioglan Superfoods Supergreens
- Salt and pepper to taste
- For the yoghurt dressing:
- 2 tbsp yoghurt
- 2 tbsp of coriander leaves finely chopped (or parsley or mint)
- Squeeze of lemon
- Black pepper to taste
Method
1. Add the spring onion and chilli into a blender and blend until fine. Add all other ingredients except the seeds into the blender and blend until mixed but leave slightly course. Mix in the seeds with a spoon. Season with salt and pepper. Flour a clean surface and place the mixture on it. Divide the mixture into 2 equal balls then flatten down into burger patty shapes.
2. Cook either in an air fryer at 180 degrees for 14 minutes or fry in a lightly oiled pan for approximately 15 minutes turning every 2-3 minutes until crisp and browned on the outside.
3. Make the yoghurt sauce by mixing all the ingredients together then serve the beanie burger in a burger bun with garnish and yoghurt sauce. Enjoy!
