We loved making these Apricot Bliss Balls with our microbiome friendly Digestive Boost! They make the perfect mid-morning snack to keep you energized all day.

- 140g Chopped Apricots
- 2 tbsp Maple Syrup
- 1 tbsp Lemon Juice
- ½ tsp Vanilla Extract
- ¾ cup of Desiccated Coconut
- 1 tbsp Bioglan Superfoods Digestive Boost
- ¼ cup of Rolled Oats
- Desiccated Coconut (additional topping)
Method
1. Add the chopped apricots, maple syrup, lemon juice and vanilla extract to a blender or food processor and blend until tiny pieces of apricot are formed.
2. Add the desiccated coconut, Bioglan Superfoods Digestive Boost and rolled oats to your mixture and further blend until combined.
3. Check you’re happy with the consistency of your mixture if it’s too dry add a splash of water or if it’s too wet add some more rolled oats.
4. Pour some of the remaining desiccated coconut onto a plate and spoon the mixture out of the blender/food processor and roll into balls using your hands. Roll the balls into the coconut flakes until covered and place onto another plate. Repeat this step until all the mixture has gone.
5. Place the plate of your Apricot Bliss Balls into the fridge for 15-20 minutes to set. Enjoy!
