Vegan Lemon Drizzle Loaf
with Digestive Boost
When life gives you lemons…make a vegan lemon drizzle loaf! This zesty drizzle contains our gut-friendly Digestive Boost.

- For the sponge:
- 100ml vegetable oil, plus extra for the tin
- 170ml cold water
- 275g self-raising flour
- 200g caster sugar
- 1 tsp baking powder
- Zest of 1 lemon
- 1 lemon, juiced
- For the icing:
- 200g icing sugar
- 1 lemon, juiced
- 1 tbsp of Bioglan Superfoods Digestive Boost
Method
1. Heat oven to 200C/180C fan/gas 6. Grease a loaf tin and line it with baking parchment or tin foil.
2. Mix the flour, sugar, baking powder and lemon zest in a bowl. Add the oil, lemon juice and 170ml cold water. Continue mixing until smooth.
3. Pour the mixture into the tin. Bake for 30-35 minutes. Cool in the tin for 10 minutes, then remove and transfer the cake to a wire rack or plate to fully cool down.
4. For the icing, sieve the icing sugar into a bowl. Mix in with the lemon juice (squeeze one lemon) and a teaspoon of water if needed.
5. Add one tablespoon of Digestive Boost powder. Mix until it blends and pour the icing over the cake. For an extra lemony taste, add lemon zest to the icing. Enjoy!
