Ingredients

- Olive oil
- ½ onion, diced
- 1 Garlic clove
- 2 rosemary sprigs, just leaves chopped
- 300g frozen peas
- ½ lemon, zest & juice
- 1 tbsp soft cheese
- 1 tsp grated parmesan
- 1 tsp Bioglan Superfoods Supergreens
- Ciabatta, thickly sliced
Method
1. In a frying pan add the onion, chopped garlic and fry until soft. Add the rosemary and cook for another 5 minutes
2. Meanwhile, cook the peas in a pan of water until cooked
3. In a bowl, add the onion mix, ½ lemon zest, most of the peas and blend. Add the lemon juice, soft cheese, parmesan and Supergreens and stir until combined.
4. Put the ciabatta on a baking tray and spray/brush with oil. Grill both sides until lightly toasted.
5. Spoon the pea mixture over the bread and top with the left-over peas, lemon zest and parmesan.
6. Enjoy!
