Mushroom Orzo

A delicious, easy dinner perfect for a weeknight. This Creamy Mushroom Orzo with Green Boost is a meal the whole family will love and a great way to get those greens in!


1. Heat the oil in a large pan and add the sliced mushrooms. Season with salt and pepper and cook until the mushrooms are browned and softened. Add the garlic and the orzo and stir for a further minute.
2. Add the vegetable stock, milk and cream to the pan and bring to a boil. Reduce the heat to a simmer and cook for around 10-15 minutes until the orzo is cooked. Make sure to stir frequently so it doesn’t stick to the bottom of the pan.
3. Once cooked, turn off the heat and stir in the parmesan and Green Boost. Serve, top with extra cheese if desired and enjoy!
