Greens On Toast
with Green Boost
Anyone else still trying to add more greens into their diet after all the Christmas treats? Why not try this super simple yet tasty Greens On Toast with Green Boost.
Ingredients

- 200g brussels sprouts, shredded
- 1 tsp Bioglan Superfoods Green Boost
- Handful of peeled hazelnuts
- 2 large slices sourdough bread
- Olive oil
- 1 clove garlic, peeled
- 1 ball burrata
- Zest of ½ a lemon
- 1 tbsp runny honey
- Salt and pepper
Method
1. Preheat the oven to 200°C/180°C fan/gas 6. Spread the hazelnuts out on a small baking tray and roast for 8-10 minutes until golden. Once cooled, roughly chop.
2. Meanwhile, add the brussels sprouts to a pan with a drizzle of olive oil and cook over a medium heat until tender and caramelized. Turn off the heat and stir in the Green Boost powder.
3. Toast the bread, then drizzle with olive oil and rub with the clove of garlic. Tear over the burrata and top with the brussels sprouts. Finally, grate over the lemon zest, drizzle over the honey, sprinkle with the hazelnuts and season with salt & pepper, enjoy!
