
Creamy Pasta
with Green Boost


This creamy pasta with Green Boost is keeping us hanging on to the last of the summer with its zesty, fresh flavours! This makes a great quick and tasty lunch and is easy to pack for work or school.
Ingredients

- 350g pasta (we used rigatoni)
- 200g houmous
- 1 avocado
- 150g peas
- 1tsp Bioglan Superfoods Green Boost
- Zest of 1 lemon
- 6 fresh mint leaves
Method
Boil the pasta according to the packet instructions. Meanwhile, add the rest of the ingredients to a blender and blend until smooth.
Once the pasta is cooked, drain and reserve some of the cooking water. Add a couple of tablespoons of this to the sauce to loosen it up to your desired consistency. Return the drained pasta to the pan and toss with the sauce over a medium heat until just warmed through. Enjoy!
