Mushroom Curry
with Beauty Protein
This super tasty Mushroom curry with Beauty Protein makes for a perfect weeknight meal for all the family.

- 1 tbsp vegetable oil
- 500g chestnut mushrooms, quartered
- 1 red onion, finely chopped
- 3-4 cloves garlic, finely chopped
- A thumb sized ginger, finely grated
- 1 tsp ground turmeric
- 1 tsp paprika
- 1 tsp ground coriander
- 1 tsp ground garam masala
- 2-3 tsp Bioglan Superfoods Beauty Protein
- Salt to taste
- ½ can peeled plum tomatoes
- Rice or Naan to serve
- Garnish ingredients:
- Mustard seeds (optional)
- Roasted cashews (optional)
- Small bunch of fresh coriander, stalks finely chopped and leaves roughly chopped
Method
1. Heat the oil in a large cooking pot and fry the mushrooms for 5-10 minutes over medium-high heat until all the moisture has evaporated, and the mushrooms have started to caramelize. Scoop out of the pot into a bowl and leave aside.
2. Add another drizzle of oil and cook off the onion, garlic and ginger on low heat until soft and golden brown.
3. Add in the spices along with Bioglan Superfoods Beauty Protein and the roughly mashed peeled plum tomatoes and stir well. Tip in the fried mushrooms and add salt to taste before pouring in 100ml of hot water to the pot. Stir well and simmer gently for 10 minutes.
4. Garnish with mustard seeds, roasted cashews and coriander leaves. Enjoy with cooked basmati rice or naans on the side.
