Greek Salad with a Twist

This delicious Greek salad is topped with Bioglan Superfoods Chia + Flax seeds and is filled with a tasty mix of spiralised courgette, olives and tomatoes.

Method

Spiralize the cucumber (using a spiralizer or vegetable peeler). Toss with the tomatoes, shallot slices, olives, mint leaves, dried mint, lemon zest, lemon juice and oil. Serve topped with Bioglan Superfoods Chia + Flax and drizzle with balsamic glaze.

(You can also add cubed feta cheese, if desired).
