
Greek Salad with a Twist

This delicious Greek salad is topped with Bioglan Superfoods Flax + Chia seeds and is filled with a tasty mix of spiralised courgette, olives and tomatoes.
Ingredients
Buy ingredients online at your selected retailer
- 1 large cucumber
- Small handful of plum tomatoes, halved
- 1 shallot, finely sliced
- 2 tbsp olives
- Small handful fresh mint leaves, torn
- 1/2 tsp dried mint
- 1/4 tsp lemon zest
- Balsamic glaze
- Juice of 1/2 a lemon
- Drizzle of extra virgin olive oil
- 1 tsp Bioglan Superfoods Flax + Chia
Method
Spiralize the cucumber (using a spiralizer or vegetable peeler). Toss with the tomatoes, shallot slices, olives, mint leaves, dried mint, lemon zest, lemon juice and oil. Serve topped with Bioglan Superfoods Flax + Chia and drizzle with balsamic glaze.
(You can also add cubed feta cheese, if desired).
